WHAT I COOKED

APPLE CRISP

This is one of our favorites treats during fall or winter! It's so easy to make, and it is so so delicious! 

Ingredients: 
2 cups all purpose flour
2 cups rolled oats ( or any oats you have) 
1 tsp ground cinnamon
1/2 tsp ground nutmeg 
1 1/2 cups packed brown sugar
1 1/2 cups ( 3 sticks) butter at room temperature
2 quarts peeled, cored and sliced apples

Directions: 
1) preheat oven to 350F 
2) in a large bowl combine all the dry 
ingredients. Cut butter into mixture until crumbly.

3) take half of the mixture and pat it into the bottom of 9x13 inch baking dish.
4) cover crumb mixture with apple slices, then sprinkle apple slices with remaining crumb mixture. 
5) bake at 350 F for 45-50 minutes or until apples are tender. 

Enjoy with vanilla ice cream! Or the way we like it, with cup of delicious coffee!

Embracing the beauty of Fall


   To be honest with you, the first couple of weeks of Fall I always feel intimidated by it! It makes me sort of sad! Sad that the beautiful hot summer days are gone... 
   This year was no different than others. Well maybe even more so intimidating. I kind of felt like a little feeling of depression was sneaking up on me. But with a prayer that God would help me to enjoy a beauty of this season, I am at a point where I am loving it! You see, I am more of a spring chick, he he. I love Spring! Love the way everything is waking up from a very long sleep. And love how it makes me feel for lively, energetic. 
   Thank God I am at the enjoying point now. I am loving the changing trees, the crisp Fall air, the warm sweaters, oh and can't forget pumpkin spice lattes, and all the activities that come with the Fall. A week ago, we took a family trip to near by farm The Hallow. My daughter enjoyed playing in corn, and patting the animals. And our sweet boy took a very long nap, naps are always better when you are outside! We chose few pumpkins for our house. 









And because the joy of this season entered into my heart as well, the house got decorated with some Fall accents! 





And of course, I want to be a little domestic, so I am making my own pumpkin purée, which I will use to make a pumpkin cheesecake and porridge. I will be sure to post some recipes ( if they will turn out well). 

These beauties are about to go into the oven to roast!
