WHAT I COOKED

APPLE CRISP

This is one of our favorites treats during fall or winter! It's so easy to make, and it is so so delicious! 

Ingredients: 
2 cups all purpose flour
2 cups rolled oats ( or any oats you have) 
1 tsp ground cinnamon
1/2 tsp ground nutmeg 
1 1/2 cups packed brown sugar
1 1/2 cups ( 3 sticks) butter at room temperature
2 quarts peeled, cored and sliced apples

Directions: 
1) preheat oven to 350F 
2) in a large bowl combine all the dry 
ingredients. Cut butter into mixture until crumbly.

3) take half of the mixture and pat it into the bottom of 9x13 inch baking dish.
4) cover crumb mixture with apple slices, then sprinkle apple slices with remaining crumb mixture. 
5) bake at 350 F for 45-50 minutes or until apples are tender. 

Enjoy with vanilla ice cream! Or the way we like it, with cup of delicious coffee!

Embracing the beauty of Fall


   To be honest with you, the first couple of weeks of Fall I always feel intimidated by it! It makes me sort of sad! Sad that the beautiful hot summer days are gone... 
   This year was no different than others. Well maybe even more so intimidating. I kind of felt like a little feeling of depression was sneaking up on me. But with a prayer that God would help me to enjoy a beauty of this season, I am at a point where I am loving it! You see, I am more of a spring chick, he he. I love Spring! Love the way everything is waking up from a very long sleep. And love how it makes me feel for lively, energetic. 
   Thank God I am at the enjoying point now. I am loving the changing trees, the crisp Fall air, the warm sweaters, oh and can't forget pumpkin spice lattes, and all the activities that come with the Fall. A week ago, we took a family trip to near by farm The Hallow. My daughter enjoyed playing in corn, and patting the animals. And our sweet boy took a very long nap, naps are always better when you are outside! We chose few pumpkins for our house. 









And because the joy of this season entered into my heart as well, the house got decorated with some Fall accents! 





And of course, I want to be a little domestic, so I am making my own pumpkin purée, which I will use to make a pumpkin cheesecake and porridge. I will be sure to post some recipes ( if they will turn out well). 

These beauties are about to go into the oven to roast!

WHAT I COOKED

CRAB SALAD

This salad is my most favorite one! It can be paired as side dish or you can enjoy it as is, and still be satisfied. 

Imitation crab meat (14oz pckg) 
4 boiled eggs
1 cup of frozen corn
1/2 cup of frozen sweet peas
1/4 cup of green onions
Salt and pepper to taste
3 Tbs mayo
Chop the crab meat and eggs mix it rest Of the ingredients, and enjoy! How easy I this?!

WHAT I COOKED

CHOCOLATE SALAMI

Thanks to olgasflavorfactory.com I have finally found the recipe I was looking for! This chocolate salami! This delicious dessert brings back so many childhood memories... And it's just so easy to make! So here is a recipe for all of you to enjoy:
1 package of animal crackers ( 16oz) 
2 sticks of butter, melted
3 Tablespoons cocoa 
1 (14oz) can of sweetened condensed milk 
Crush the crackers with rolling pin 
In a large bowl, mix together the melted butter, cocoa and condensed milk.
Add the mix to the crashed crackers and mix to combine.
You should get something like this 
Scoop out part of the mixture onto parchment paper
Shape the cracker mixture into a log and wrap tightly inside the parchment paper. As you can see mine are not perfect! I ended up with 4 good size logs!
Chill in the refrigerator or freezer. 
Enjoy the final product with tea or coffee. My favorite is tea!

BLESSED BEYOND MEASURES

Have you ever felt so blessed, that you can't contain yourself? Well that's how I feel right now! When I look at my husband play with our kids or my daughter talk to her baby brother, I just want to burst into tears! Tears of happiness!
   Last night as my daughter was sleeping in my bed (yes I let her sleep with me, when my husband is at work), and my baby boy in his crib next to my bed, I just stood there watching them for a few minutes. My heart felt so content and filled with joy! Just a year ago I couldn't even imagine life like this... But our God is a good God! Without Him I wouldn't be where I am right now!

Be still my heart


The air outside is so much cooler, days are shorter and September is here... And that means school had started! This year my little girl has started pre K! I can't believe it where did time had gone?! Just less than 4 years ago we brought home a precious little infant girl, and today she started school...
    We had lots of tears before we send her off to school, but not her tears! My tears! She was as happy as she could be! The minute she walked in into her classroom, she went to a table with coloring pages and started to color... When she came back home, she was so excited and wanted to go again as soon as possible. My baby girl is growing way too fast!
